Acar Timun (Indonesian Cucumber Pickle)

A common side dish in Indonesian, it is usually for nasi goreng (fried rice), mie goreng (fried noodles), satay (skewers).

Acar Timun (Indonesian Cucumber Pickle)

For 4 portions main dishes

You need :
a glass jar with lid

Ingredients :
350 gr cucumber, remove the center part (seeds) then cut into 1 cm cubes
50 gr carrots, peel then cut into 1 cm cubes
10 gr shallots, peel then cut into 1 cm cubes
3 tbsp white rice vinegar
½ tbsp sugar
pinch of salt

Steps :
In a mixing bowl, mix together cucumber, carrots and shallots, set aside.

In another bowl, stir together vinegar, sugar and salt until dissolved, then pour it into the cucumber, mix with a spoon. Place them into glass jar, close the lid and put in the fridge for 1 night.

On the next day, it is ready to be served!
