Ayam Bakar Kecap (Sweet Soy Sauce Grilled Chicken)

This chicken dish is very popular in Sundanese area which is in West Java province where I lived. It tastes very good, a combination of fresh spices like shallot, garlic, galangal, turmeric, lemon grass and sweet soy sauce. It is eaten with another dishes like fried fish, fried tofu and tempe, perkedel jagung (Corn Cake), perkedel kentang (potato cake), lalap (fresh salad leaves) and sambal (chili paste).

Ayam Bakar Kecap (Sweet Soy Sauce Grilled Chicken)

Serve : 5

You need :
a food processor or a blender

Ingredients :
1.3 kg whole chicken or chicken thighs
2 lime leaves
2 bay leaves
1 lemon grass

Spices :
60 gr shallots
3 cloves garlic
7 candle nuts
4 tbsp cooking oil
2 cm galangal or 1 tsp galangal powder
1 cm turmeric or ½ tsp turmeric powder
½ tsp ground white pepper
1½ tsp salt
8 tbsp Indonesian sweet soy sauce (kecap manis)
lime juice from 1 lime
1 tbsp Javanese sugar or palm sugar

Steps :
For the spices, blend all ingredients in a food processor with high speed until become a smooth paste. Set aside.

Prepare a large pan over medium high heat. Add in the spice paste, lime leaves, bay leaves and lemon grass into the pan and fry it for a while until fragrance. 

Add in the chicken, stir carefully until the paste covers the chicken. Turn off the heat. Let them sit for few hours to marinade.

Prepare the grill, put the chicken onto the wire rack. Grill it until fully cooked, don't forget to flip them frequently.

(If you use the oven : Preheat the oven into 180 degree Celsius. Put the chicken onto the wire rack on a baking pan. Bake for about 30 minutes of until the chicken is fully cooked. Turn off the oven.)

Serve with steamed white rice, some lettuce, tomato and cucumber slices, fried tofu and tempe (fermented soy bean), sambal (red chili paste).
