Ayam Jahe (Ginger Chicken)

This dish is called "ayam jahe" in Indonesia, and is called "pak cam ke" (白切鸡, báiqièjī) in Cantonese (southern China) which means "white cut chicken". It is very well-known among Indonesian-Chinese cuisine and would be found in almost every chinese restaurants in Indonesia. It is called "white" because the chicken is only boiled in salted water and served with a ginger condiment and soy sauce.

Ginger Chicken

Serve : 4

Ingredients :
1.2 kg chicken thighs
1 onion or 3 stalks spring onion
3 tbsp salt

Ginger Condiment :
100 gr ginger, peel and mince
6 garlic, peel and mince
1 tbsp sesame oil
3 tbsp cooking oil
salt and pepper

Sauce :
5 tbsp chicken broth
4 tbsp soy sauce
1 tsp sesame oil

Steps :
Put chicken thighs and onion into a large pot, cover them with water. Add in salt. Cook with medium heat until the chicken fully cooked (for about 1 hour). Turn off the heat. Drain the chicken to remove excess water. (Do not throw the chicken broth, it could be used for another delicious dishes like risotto, Spinach Corn Soup, Seafood Paella, Potato Cream Soup, etc).

For the sauce. Combine all ingredients. Set aside.

When the chicken thighs are cooled down, separate its meat and bones with your hand. Chop them if needed, then arrange into a serving plate. Set aside.

For the condiment. Prepare a pan over medium-high heat. Add in cooking oil, then minced garlic and ginger. Saute them until become golden brown. Add in salt, pepper and sesame oil. Turn off the heat. Spread them onto the chicken. Serve with steamed white rice and the sauce.
