Bravas Patatas (Roasted Potatoes with Spicy Tomato Sauce)

This tapas dish is served hot, roast or fried potato with spicy tomato sauce. Just skip the chili powder and cayenne pepper if you don't like the spicy sauce.

Bravas Patatas (Roasted Potatoes with Spicy Tomato Sauce)

Serve : 4

Ingredients :
1 kg potato, peel and cut into chunks
some salt
some ground black pepper
4 tbsp olive oil
1 garlic, mince

Sauce :
¼ medium size onion, peel and mince
1 clove garlic, peel and mince
3 tbsp olive oil
100 ml canned tomato puree
100 ml chicken stock
100 ml whipping cream
salt and pepper to taste
1 tbsp all purpose flour
1 tsp sweet paprika powder
pinch of chili powder (optional)
pinch of cayenne pepper (optional)
pinch of dried thyme
pinch of dried oregano

Steps :
Place the potato chunks into a bowl or plate. Microwave them for 10 minutes (800W) or until soften. You can deep fried them but I like to soften them with microwave (less messy, less fat 😉 ).

Take the potatoes from the microwave, add in olive oil, salt, pepper and garlic. Mix evenly with a spoon.

Prepare a back tray, line with a baking paper. Spread the potatoes onto it. Bake into 225 degrees Celsius for about 20 minutes or until become golden brown.

For the sauce. Into a sauce pan over medium high heat, add in olive oil, onion and garlic. Fry them until fragrance. Then add in tomato puree, chicken stock, whipping cream and the flour. Stir slowly with a balloon whisk until combined (it should have no lumps). Season with salt, pepper, paprika powder, cayenne pepper, chili powder and the herbs. Stir again until the sauce thickens.

Transfer the potatoes into serving plates, serve with the sauce.
