Christmas Cookies

Still in holiday mood, I want to share my butter cookies recipe with christmas themed decorations.

It is a tradition in our family (I believe it would be in your family too 🙂 ) to bake and decorate cookies before Christmas. I like to spend hours with my daughter to bake and decorate cookies. We make the dough together, and the best part would be cutting and decorating them. Your kitchen would be a little bit messy but it doesn't matter, it's precious to spend time with your little one especially during christmas time.

Christmas Cookies

Makes about 600 gr cookies

You need :
a hand mixer
a rolling pin
christmas themed cookie cutters
baking trays
parchment papers

Ingredients :
100 gr butter (room temperature)
75 gr caster sugar
1 tsp vanilla extract
2 eggs
325 gr flour
½ tsp baking soda
½ tsp salt

Decoration :
225 gr royal icing mix
50 ml water
food coloring
sprinkles

Steps :
Mix flour with baking soda and salt, set aside.

Line baking trays with parchment paper. Set aside.

Mix butter, sugar and vanilla with a hand mixer on medium speed until become smooth and pale. Add in the eggs, mix them again until well combined.

Add in dry ingredients into the butter mixture. Mix them with a spatula or with your hand. Knead them until become a smooth dough, then form it into a ball. Wrap with plastic wrap then put it into the fridge for about 15 minutes.

Take the dough out from the fridge. Sprinkle the working surface with flour, roll the dough with a rolling pin until reaching about 5 mm thick. Cut the dough by using cookie cutters. Arrange the cookies onto baking trays. Roll again the dough rest and repeat the process until finished.

Bake the cookies into preheated oven in 150 degree Celsius for about 25 minutes. Turn off the oven and let them cool.

For the icing. Mix together royal icing and water, stir until well combined. Divide into bowls and add in food colorings. Take a cookie and dip it into the icing mixture. Place it into a plate then decorate immediately with sprinkles before the icing sets. Repeat this process for every cookies.

(you can also use piping bag to decorate the cookies, but I like to make it quick and easy, so I just dipped them into the icing mixture and decorate them with some sprinkles)
