Rice-cooker "Claypot" Rice

Claypot (chinese: 砂锅 shāguō or 煲仔 bāozǎi) is a type of cookware made from clay. Claypot cooking is used around the world but mostly in Asian countries. In China there are some famous claypot dishes : congee, claypot tofu and seafood, claypot pork belly, claypot fish and claypot rice. Claypot rice is easier to make because we can make it just using a rice cooker.

First time I tried claypot rice was in Hong Kong. A friend of mine has recommended a very good claypot rice restaurant in Yau Ma Tei area. They had many choices of claypot rice but their famous dishes were pork ribs claypot rice and chicken claypot rice. This recipe was inspired from this restaurant.

Rice-cooker "Claypot" Rice

Serve : 4

You need :
a rice cooker

Ingredients :
580 gr jasmine rice corns, wash
650 ml water
300 gr pork or chicken, cut into bite size pieces
1 Chinese sausage
10 dried shiitake mushrooms, soak in water until soften and slice
2 garlic, peel and mince
2 cm ginger, peel and mince
1 tbsp sesame oil
3 tbsp cooking oil
1 tsp fish sauce
4 tbsp Kikkoman all purpose soy sauce
1 tbsp sugar
salt and pepper

Steps :
Add in rice corns into the rice cooker. Set aside.

Prepare a frying pan over medium high heat. Add in cooking oil, sesame oil, pork or chicken, mushroom and sausage. Saute them for 1 minute, then add in minced garlic, minced ginger, fish sauce, soy sauce, sugar, salt and pepper. Continue sauteing for another 2 minute.s Turn off the heat. Add into the rice.

Pour in water into the rice. Stir them a little bit then close the lid and turn the rice cooker on and press "cooking" button. Wait until well cooked (the light from the cooker usually will change color) then turn off the cooker. Enjoy the rice with sauteed vegetable like Sauteed Bokchoy.
