Coconut Vanilla Dessert

Dried grated coconut in spring rolls wrappers, deep fried and served with vanilla sauce and a scoop of vanilla ice cream, what a perfect dessert! I was inspired by a dessert in a Thai restaurant, and this is very similar. If you Thai food, Indonesian food or coconut  fans, you'll love it! 😉

Coconut Vanilla Dessert

Serve : 4

Ingredients :
12 spring rolls wrappers (12 cm x 12 cm)
12 tbsp dried grated coconut
2 tbsp sweet condensed milk
4 tbsp milk
frying oil

Vanilla sauce :
250 ml milk
½ tbsp corn starch
35 gr sugar
vanilla extract
1 egg yolk
½ tbsp butter

Extra :
4 scoop vanilla ice cream
cocoa powder to dust

Steps :
Into a bowl, add in dried grated coconut, condensed milk and milk. Mix with a spoon until combined. Take a wrapper, put 1 tbsp of the coconut mixture onto the middle, wrap it into a triangle shape (brush the edges with your wet hand to stick it), then stick the left and right corner into the middle corner. Repeat this process eleven more times.

Heat frying oil in a pan over medium high heat, deep fry the coconut wraps carefully until golden brown. Drain on paper towel to remove excess oil. Wait to cool.

For the sauce. Add all ingredients into a sauce pan, cook over medium heat, stir it continuously until well combined and thickens. Turn off the heat then leave to cool.

To serve, add about 2-3 tbsp sauce onto a plate. Then put 1 scoop of vanilla ice cream onto the sauce. Put 3 fried coconut wraps, dust with cocoa powder. Serve immediately.
