Crabs in Spicy Oyster Sauce

Found frozen blue crabs in Asia store. My husband was so excited because we can't always find the good quality, large size frozen crabs here. I cooked them on that day because I didn't have enough space in the freezer 😉 This spicy oyster sauce mixture is one of my favorite sauce for crabs dish.

Crabs in Spicy Oyster Sauce

Serve : 4

Ingredients :
800 gr blue crabs, boil in salted water for 5 minutes, drain (do not throw the cooking water)
2 stalks spring onion, chop
1 red chilies, remove the stalk and chop
3 tbsp cooking oil
250 ml cooking water
Salt
Black pepper
½ tbsp tapioca starch + 1.5 tbsp water

Spice paste :
50 gr shallots
1 red chili
3 garlic
5 gr ginger
½ tbsp tomato sauce
2 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp sugar

Steps :
For the paste, blend all ingredients in a blender or a food processor until smooth.

Into a wok or a large pan over medium high heat, add in cooking oil, chopped red chili and spring onion. Fry them for a while. Then add in the paste. Stir them quickly to prevent burning.

Add in boiled crabs into the paste. Stir and mix them evenly. Pour in the cooking water, season with salt (if needed) and black pepper. Turn down the heat and continue cooking until the crabs absorb the paste.

Add in tapioca flour mixture to thicken the sauce. Stir quickly. Turn off the heat. Transfer into a serving plate. Serve with white rice and another dishes.
