Creme Brulée

It is custard pudding originally from France which has become popular in the entire world. There is similar dish named Crema Catalana which comes from Spain (Catalonia area). It's delicious and easy to make.

Creme Brulée

Serve : 4

You need :
heat-resistant ramekins (volume 100 ml)
a cooking torch

Ingredients :
4 egg yolks
50 gr caster sugar
200 ml whipping cream
100 ml milk
vanilla extract

For serving :
caster sugar

Steps :
Pour whipping cream and milk into a sauce pan. Heat them on medium heat until simmer. Turn off the heat, set aside.

Into a mixing bowl, add in egg yolks, sugar and vanilla. Whisk with a balloon-whisk until pale in color.

Prepare a steamer (I use electric steamer).

Pour heated cream-milk mixture into the egg yolk slowly, stir carefully until all well mixed. Pour them into the ramekins (through the strainer first to prevent egg lumps).

Steam them for 30 minutes. Turn off the steamer and wait to cool.

To serve, sprinkle some caster sugar generously. Torch it until the sugar burns and hardens.
