Hainan Chicken Rice

A famous dish which comes from Hainan province, China. But very popular in South east Asia like Singapore, Malaysia, Thailand and Indonesia. It needs just simple ingredients and not complicated to make. Let's try!

Hainan Chicken Rice

Serve : 4

You need :
a rice cooker

Ingredients :
For the chicken :
1.2-1.4 kg chicken (I use chicken thighs, whole chicken is ok)
2 stalks spring onion, cut into 5 cm long
50 gr ginger, peel and slice roughly1½ tbsp salt
2 L water (or more water if you want to serve with extra soup as side dish)

For the rice :
580 gr (or 640 ml or 4 rice-cup) jasmine rice corns
750 ml chicken broth that was made from boiling chicken process
5 cloves garlic, peel and mince
50 gr ginger, peel and mince
2 tbsp cooking oil
pinch of salt
pinch of ground white pepper

For the sauce :
100 ml chicken stock
2 tbsp soy sauce
2 tsp sugar

Extra :
cucumber slices
chicken stock (soup)
chili sauce

Chicken. Put the chicken into a pot, add in spring onion, ginger and water (chicken should be all covered with water). Cook over medium heat, until the chicken fully cooked, it takes about 1 hour. After that, drain the chicken, sieve the chicken stock and let them cool down a little bit. Then debone the chicken with hand by pulling the meat out, cut into large slices. Set aside.

Rice. Into a pan over medium high heat, add in cooking oil, garlic and ginger, fry them for a while until fragrance. Then add in the washed rice corns, stir in with the garlic, season with salt and pepper. Turn off the heat, transfer them into the rice cooker. Pour in the stock, switch on and cook until finish.

Sauce. Stir all ingredients until incorporated.

Serve. Add the rice onto a serving plate, place the chicken slices on the rice, then pour in the sauce. Garnish with cucumber slices, serve with a bowl of chicken stock as a soup.
