Roasted Mediterranean Vegetables

I like to call these vegetables as "three good friends". Combination of these three vegetables is very common in mediterranean culinary because they taste really good together. Ratatouille (read : rat-ə-too-ee) is one of famous french dish which use these three vegetables as main ingredients.

This would be a simple side dish for your meat dishes. I like to eat them with Keftedes (Greek Pork Rolls) or Souvlaki (Greek Meat Skewer). I also love to combine them with risotto as vegetables risotto (I would share the recipe in the next posts).

Roasted Mediterranean Vegetables

Serve : 4

You need :
a baking dish

Ingredients :
1 zucchini, chop
1 eggplant, chop
1 red bell pepper, core and chop
½ red onion, peel and chop
5 tbsp olive oil
1 tsp dried oregano
1 tsp dried basil
salt and pepper to taste

Steps :
Preheat the oven into 200 degree Celsius.

Put chopped zucchini, bell pepper, eggplant and onion onto the baking dish. Add in olive oil, dried oregano, dried basil, salt and pepper into them. Mix them until combined.

Put all ingredients into the baking dish, then mix them until well combined. Put them in the oven for about 20-30 minutes or until soften. Turn off the oven.  Serve as side dish for your steak or another meat dishes.
