Sambal Terasi (Shrimp Chili Paste)

There are so many chili paste in Indonesian culinary culture. I would say that almost every Indonesian savory dish has their own chili paste. Sambal terasi is one of the famous one in made from chili and shrimp paste so it has a strong flavour. It's served usually with fried chicken or grilled fish.

Sambal Terasi (Shrimp Chili Paste)

Serve : 8

You need :
a blender or a food processor

Ingredients :
15 gr shrimp paste (I use 3 sachets ABC Terasi Udang)
10 red chilies
10 red bird's eye chilies (reduce if you don't want it to be too spicy)
2 shallots
1 clove garlic
4 red tomatoes, remove the seeds part
2 tsp sugar
3 tbsp cooking oil

Extra :
lime juice

Steps :
Sear the shrimp paste in a pan over medium high heat for minutes until fragrance. Turn off the heat.

Put all ingredients into a blender or a food processor. Blend them with high speed until become a smooth paste (reduce the time or the speed to get a chunky paste).

Prepare a pan over medium heat, put the paste and saute it until cooked and until become thick.

Turn off the heat and serve with dishes such as Fried Chicken, Grilled Chicken, Nasi Kuning, Nasi Lemak, etc. Splash with lime juice by serving.
