Shrimps in Mayonnaise
This dish is popular in many chinese restaurants in Indonesia. It tastes so creamy and delicious. Some people like to make it with thick mayonnaise which will make it tastes creamier. I make it with less mayonnaise (to reduce fat content in it). But of course you can make it with more mayonnaise if you like.
I use frozen shrimps I always buy in asian market (Asiamarkt). It's not so easy to find fresh shrimps in south Germany where is far away from the sea. If we could find them, it would be so expensive. The shrimps are battered first then fried until crispy golden brown. Then mixed with the mayonnaise. I like the mayonnaise to be sweet, so I add a small amount of honey.
Shrimps in Mayonnaise
Serve : 4
Ingredients :
250 gr medium size skinless headless shrimps
frying oil
Batter :
100 gr all purpose flour
1 egg
100 ml water
½ tsp salt
½ tsp baking powder
Mayonnaise :
4 tbsp mayonnaise
2 tsp honey
2 tsp white vinegar
Extra :
black sesame seeds
Steps :
For the sauce. Put mayonnaise, honey and vinegar in a bowl, stir them until well combined. Set aside.
For the batter. Put all ingredients into a mixing bowl. Stir carefully using a balloon whisk until combined. Put the shrimps into the batter. Stir a little bit until they are covered with the batter.
Prepare a frying pan over high heat, pour in frying oil. Wait until the oil is ready. Put some battered shrimps into the hot oil and fry until become golden brown. Drain onto paper towel to remove excess oil. Repeat this process until finished, do not crowd the pan to get crispy result.
Put the fried shrimps into the mayonnaise mixture. Stir carefully until the shrimps are covered with the sauce. Transfer into a serving plate, garnish with black sesame seeds. Serve with steamed white rice.
