Soto Ayam Kuning (Turmeric Chicken Soup)

There are more than 15 kinds of "soto" (meat soup) in Indonesia, they come from different places with  different styles :
Soto Bandung comes from Bandung (West Java province), it is clear beef soup and contains white radish. Soto Padang comes from Padang (West Sumatera province), taste a little bit sour and served with Potato Cake. Soto Betawi comes from Jakarta (the capital city), contain beef offal and coconut milk. Soto Makasar comes from Makasar (south Sulawesi province), etc.

This "soto ayam kuning" means "yellow chicken soup" comes originally from Lamongan city in east Java province, it's called "yellow" because the soup has yellow color from the turmeric.

Soto Ayam Kuning (Turmeric Chicken Soup)

Serve : 6

You need :
a blender or a food processor

Ingredients :
1.5 kg whole chicken
1 lemon grass, smash
2 bay leaves
2 tbsp sugar
3 L water
cooking oil
salt and pepper to taste

Spices :
5 cloves garlic, peel
75 gr shallots, peel
1 tsp ground coriander seeds
½ tsp cumin
6 candle nuts
3 cm ginger, peel
¾ tbsp ground turmeric
1 tsp ground galangal
1 tsp ground cinnamon
3 tbsp cooking oil

Extra :
steamed white rice
6 hard boiled eggs
chopped fresh celery leaves or dried celery leaves
fried shallots
200 gr bean sprouts (soak in boiling water for 5 minutes, then drain them)

Steps :
Put the chicken in a large pot, pour in water, season with a big pinch of salt. Boil it over medium high heat until fully cooked. Turn off the heat. Take the chicken out from the pot, drain and wait to cool.
DO NOT throw out the cooking water!

After the chicken has cooled down, pull the chicken meat from the bones and shred into smaller pieces with your fingers. Set aside.

For the spices. Put spices into a blender or a food processor, blend them with high speed until become a smooth paste. Set aside.

Prepare another large pot over medium high heat, add in some cooking oil. Put the spice paste, lemon grass and bay leaves, cook them for a while until fragrance. Add in boiled shredded chicken and the broth (from chicken boiling process). Season with sugar, salt and pepper, continue cooking until it boils. Turn off the heat.

Serve with white rice, boiled eggs, bean sprouts, fried shallots and celery leaves.
