Soy Sauce Braised Eggs

Brown color hard boiled eggs, with soy sauce-based marinating sauce, very common in Chinese cuisine especially in south China. Some people braised them also with heavy black tea and soy sauce mixture. But I make it just by using dark Chinese soy sauce which could be bough in most of Asian grocery stores in Europe. Don't be confused with light Chinese soy sauce which is lighter in color and taste. For this dish, we need the dark one to make the eggs turn into beautiful brown color.

It is eaten mostly as a very good companion side dish from Charsiu BBQ Pork and/or Roasted Five-Spice Pork Belly. It's really easy to make.

Soy Sauce Braised Eggs

Makes 10 eggs

Ingredients :
10 peeled hard boiled eggs,
1 clove garlic, peel and smash
2 star anise
2 tbsp Chinese dark soy sauce
2 tbsp sugar
½ tsp salt
200 ml water

Steps :
Mix all ingredients except the eggs in a pot, cook over medium heat until simmers, then add in the eggs, turn the eggs to make them all evenly covered with the marinade. Turn off the heat, wait to cool.

After cooled down, place the egg into a sealable food-safe plastic bag, pour in the marinade. Let them sit for few hours before eating. When you ready to eat, just drain the eggs and cut them.
