Spicy Fried Squid
I like fried and spicy food.
I made this dish accidentally, I saw that I had frozen squid in my freezer and I didn't know how should I use them. Then this idea came into my mind: I batter them, fry them and make them spicy 😉
The squid must be dried before they go into the batter by using paper towel. "Dry" means no excess water from the melting ice or from the washing process. I add in a little bit of baking soda into the batter to make them crispier. Frying squid should be quick into very hot oil. After deep frying, I saute them with very simple spices which are garlic, shallot and chilies. Using 4 chilies was already to spicy for my husband who can only eat "light-spicy" food. But for me it's perfect! Just reduce the chilies if you don't like it to be too spicy.
Spicy Fried Squid
Serve : 4
400 gr squid, clean and slice into bite size pieces
1 clove garlic, peel and mince
1 shallot, peel and mince
2 red chilies, slice
2 green chilies, slice
½ tbsp sugar
2 tbsp cooking oil
5 tbsp flour
2 tbsp corn meal
½ tsp baking soda
Remove excess water from the squid pieces with paper towel.
Mix the batter ingredients into a mixing bowl, stir them until well combined using a balloon whisk. Add in squid pieces into the batter. Mix them until the squid pieces are covered with the batter.
Prepare a frying pan over high heat. Add in frying oil and wait until the oil is heated. Fry the squid until golden brown and crispy. Divide frying process into 3 batches, do not crowd the pan to make them crispy. Drain them into paper towel to remove excess oil.
Prepare a pan over medium high heat. Add in some cooking oil. Add in garlic, shallot, red chilies and green chilies. Saute them for a while until fragrance. Then add in fried squid. Add in sugar, salt and pepper to taste. Turn off the heat and transfer into a serving plate.
