Spinach and Corn Soup

Are you ready for winter? This spinach soup will keep you healthy and warm in winter!

My daughter really love this soup and she calls it as "popeye soup" 😉 It's suitable for kids, it tastes sweet from the corn, contains vegetables and natural chicken broth. I like to use chicken broth but you can substitute it with beef broth or even vegetable broth. I always make my own broth with chicken thigh or chicken bones. It tastes much better than instant stock powder or cubes.

I use frozen spinach very often, because it's quiet difficult to find fresh spinach in supermarket here. But we can always find frozen vegetables such as spinach, broccoli, green beans, mushrooms in every supermarket's frozen departments. Just like corn, we can't always find fresh corn, but canned corn is very easy to find. If you have fresh spinach and corn, just go with it, it's even better!

Spinach and Corn Soup

Serve : 4

Ingredients :
250 gr frozen spinach, thaw (or 400 gr fresh spinach)
1 chicken thigh (optional, for the stock)
1 tbsp cooking oil
150 gr canned corn, drain its excess water
1 L water
Salt and pepper

Steps :
Put chicken thigh into a pot then cover with water, add in a little bit of salt. Bring it to boil, then turn down the heat, let it simmer until the chicken is fully cooked. Turn off the heat. Take the chicken out from the stock. Wait to cool.

When the chicken is cooled down, split the meat from the bones, shred the meat into small pieces. Set aside.

Prepare another pot or pan over medium high heat, add in cooking oil. Put the spinach, fry them for a while, then add in the shredded chicken. Stir them carefully.

Pour in the chicken stock into the spinach. Add in corn. Season with salt and pepper. Stir and cook them until spinach are cooked. Turn off the heat. Pour them into serving bowls.
