Spring Rolls

Today I got a little helper in my kitchen. Yes, it is my daughter who helped me to wrap and roll our spring rolls 😉 Thanks dear! Spring roll has become one of her favorite "fried dishes" (She loves almost all fries). I like to fill the spring rolls with chicken, carrots, eggs and glass noodles. Actually you can choose meat and vegetables you like. Spring roll could be served as snack or side dish.

Spring Rolls

Makes 20 rolls

Ingredients :
20 sheets spring roll wraps size 20 cm x 20 cm
Oil for frying

For the filling :
50 gr shallots, peel and slice thinly
1 clove garlic, peel and mince1 stalk spring onion, slice thinly
1 stalk spring onion, slice thinly
5 tbsp cooking oil
150 gr chicken, cut into small cubes
150 gr carrots, peel and cut into matchsticks
100 gr dried glass noodles
2 eggs, whisk in a bowl with a fork
2 tbsp kecap manis (Indonesian sweet soy sauce)
½ tsp salt (or depends on your desire)
pinch of ground white pepper

Steps :
For the filling. In a pan over high heat, add cooking oil, shallot, garlic and spring onion, fry until fragrance. Add chicken, fry until half cooked. Add the eggs, wait for 30 seconds before you scramble it.

Add in carrots and glass noodles. Then add kecap manis, salt and pepper. Stir evenly then turn off the heat, transfer into a plate to cool.

After the filling has cooled down, take a sheet spring roll wrap with a corner facing you (in diamond shape, so you will have front, back, left, right corners). Put about 1-1.5 tbsp filling onto the lower center horizontally, then fold the corner over the filling. Fold the right and left corners to the center. Brush the back corner with a little bit of water then roll it to the back corner. Repeat this process until finished.

Fill a wok or a frying pan with enough oil for deep frying. Preheat over medium high heat. Fry all the spring rolls until golden brown. D it in batches, do not overcrowd the pan otherwise the spring rolls won't be crispy. Drain on paper towel. Serve with chili sauce if you like, but for me, without chili sauce tastes delicious already.
