Sweet and Sour Pork

Serve : 2

300 gr pork neck, cut into bite size chunks
1 tbsp sake
pinch of pepper
½ tsp salt
1 egg
1 tbsp all purpose flour
4 tbsp corn flour
1 clove garlic, peel and mince
½ tsp minced ginger
3 tbsp cooking oil
½ red bell pepper, core and cut into bite size pieces
80 gr zucchini or cucumber, slice
oil for deep frying

For the sauce:
2 tbsp Chinese black vinegar
3 tbsp ketchup
½ tbsp tomato puree
3 tbsp sugar
100 ml water
½ tbsp tapioca flour
½ tsp salt

Steps :
First mix together pork, salt, pepper, sake, egg in a mixing bowl. Add in all purpose flour and corn flour then stir again. Prepare a wok or deep frying pan over high heat, fill its 1/3 part with oil, wait until the oil is hot enough for deep frying. Add in the pork one by one into the hot oil. fry until golden brown. Divide into batches, don't overcrowd the pan, otherwise the pork wouldn't be crispy. Drain on paper towel. Set aside.

For the sauce, whisk together all ingredients in a bowl. Set aside.

In a wok or a pan over high heat, add in cooking oil, garlic and ginger. Fry until fragrance then add in bell pepper and zucchini, saute for a while. Then add in the sauce, let it boils and add in the fried pork immediately, stir evenly. Turn off the heat, and transfer into a serving plate. Serve with cooked white rice.
